Ker je ajda naravno brez glutena, so krapi odli\u010dna izbira tudi za brezglutensko prehrano \u2013 ob pravilni izbiri sestavin in postopka.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bistvo uspe\u0161ne priprave je poparjeno ajdovo testo. Ajdovo moko prelijemo z vrelo vodo, s \u010dimer dose\u017eemo delno \u017eelatinizacijo \u0161kroba. Testo postane mehko, voljno in primerno za oblikovanje, tudi brez dodatka p\u0161eni\u010dne moke. Tako dobimo pristno brezglutensko razli\u010dico, ki ohrani zna\u010dilen okus ajde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">V tej izvedbi so ajdovi krapi polnjeni s proseno ka\u0161o in kislo smetano. <strong><a href=\"https:\/\/dietnikuhar.si\/proso\/\" data-type=\"post\" data-id=\"33\">Prosena ka\u0161a<\/a><\/strong>, kuhana zelo mehko, ustvari kremasto in ne\u017eno sredico, ki lepo dopolni rahlo zemeljsko noto ajdovega testa. Ko krapi priplavajo na povr\u0161je, jih kuhamo \u0161e minuto, da se struktura popolnoma stabilizira.<\/p>\n\n\n\n\r\n    <div class=\"info-box\">\r\n        \n<h4>Ajda &#8211; zakladnica hranil<\/h4>\n<p>Ajda vsebuje vse esencialne aminokisline, med njimi posebej izstopa lizin, ki ga v klasi\u010dnih \u017eitih pogosto primanjkuje. Njena beljakovinska sestava je zato bolj uravnote\u017eena  kot recimo pri p\u0161enici ali koruzi. Poleg tega je ajda naravno bogata z magnezijem, manganom, \u017eelezom in rutinom, naravnim antioksidantom, ki je ena od zna\u010dilnih spojin ajde.<\/p>\n<hr class=\"info-divider\">\n<h4>Proso &#8211; vitamini in minerali<\/h4>\n<p>Proso je lahko prebavljivo in naravno brez glutena. Vsebuje pomembne koli\u010dine magnezija, fosforja in \u017eeleza ter vitamine skupine B, zlasti niacin (B3) in vitamin B6. Nadev mora biti kremast in mazav. Po potrebi dodamo \u017elico smetane ali malo toplega mleka.<\/li><li class=\"bold-step\"><strong>Oblikovanje<\/strong><\/li><li class=\"normal-step\">Testo razvaljamo na pribli\u017eno 2\u20133 mm debeline. Izre\u017eemo kroge, na sredino vsakega polo\u017eimo \u017eli\u010dko nadeva, navla\u017eimo robove in prepognemo v polmesec. Robove dobro zatisnemo. Pri ajdovem testu je pomembno, da delamo mirno in brez hitenja \u2013 robovi se bodo lepo zaprli, \u010de testo ni presuho.<\/li><li class=\"bold-step\"><strong>Kuhanje<\/strong><\/li><li class=\"normal-step\">Krape kuhamo v rahlo vreli slani vodi 5\u20136 minut.
