Soja (<em>Glycine max<\/em>) je stro\u010dnica, ki izvira iz vzhodne Azije in je danes ena najpomembnej\u0161ih polj\u0161\u010din na svetu. Zaradi visoke vsebnosti beljakovin in ma\u0161\u010dob ima pomembno vlogo v prehrani \u0161tevilnih kultur. Iz soje nastajajo razli\u010dni izdelki, kot so tofu, tempeh, sojino mleko, miso, sojina omaka in sojina moka. Zaradi svoje hranilne sestave je soja pogosto vklju\u010dena v vegetarijansko in vegansko prehrano ter v razli\u010dne pekovske izdelke.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Soja je prehransko zelo bogata stro\u010dnica. V primerjavi z ve\u010dino \u017eit vsebuje precej ve\u010d beljakovin, hkrati pa tudi pomembne minerale in vlaknine. Pribli\u017ena hranilna vrednost suhe soje na 100 g je prikazana v tabeli na dnu \u010dlanka.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Zaradi tak\u0161ne sestave soja predstavlja pomemben vir rastlinskih beljakovin. V kulinariki se uporablja v razli\u010dnih oblikah, med katerimi je za peko posebej zanimiva sojina moka.<\/p>\n\n\n\n<div class=\"enciklopedija-box\">\n<h3>GSO in soja<\/h3>\n<p>V svetovni pridelavi je velik dele\u017e soje gensko spremenjene (GSO), predvsem v dr\u017eavah, kot so ZDA, Brazilija in Argentina. V Evropski uniji je gojenje gensko spremenjene soje zelo omejeno, \u0161tevilni izdelki iz soje na evropskem trgu pa so ozna\u010deni kot non-GMO ali iz ekolo\u0161ke pridelave.<\/p> \n<p>Tudi v Sloveniji se soja prideluje predvsem iz gensko nespremenjenih sort, pomemben del pridelave pa je namenjen prehrani ljudi, ne le krmi za \u017eivali.<\/p>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Sojina moka<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sojina moka nastane z mletjem sojinih zrn. Lahko je polnomastna, razma\u0161\u010dena ali pra\u017eena, kar vpliva na okus in obna\u0161anje v testu. Ko pride v stik z teko\u010dino, beljakovine hitro absorbirajo vlago in ustvarijo gosto strukturo testa. To vpliva na hidracijo, saj testo pogosto potrebuje nekoliko ve\u010d vode kot pri nekaterih drugih mokah.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beljakovine v soji sicer ne tvorijo glutenske mre\u017ee, vendar kljub temu pomembno vplivajo na strukturo testa. Prispevajo k vezavi sestavin, izbolj\u0161ujejo stabilnost testa in pomagajo pri nastanku enakomernej\u0161e sredice. Nastane z dolgotrajno fermentacijo sojinih zrn s pomo\u010djo plesni, bakterij in kvasovk. Med fermentacijo nastanejo \u0161tevilne aromati\u010dne spojine, ki dajejo omaki zna\u010dilen slan in umami okus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Obstaja ve\u010d vrst sojine omake, najpogostej\u0161i pa sta <strong>shoyu<\/strong> in <strong>tamari<\/strong>. Pripravljena je iz me\u0161anice soje, p\u0161enice, soli in vode.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">P\u0161enica daje omaki nekoliko mehkej\u0161i in bolj zaokro\u017een okus. Ker vsebuje p\u0161enico, <strong>ni primerna za ljudi s celiakijo ali ob\u010dutljivostjo na gluten<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tamari<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><a href=\"https:\/\/pretti.si\/izdelek\/lima-ekoloska-omaka-tamari-25-soli-500-ml\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tamari<\/a><\/strong> je tradicionalna japonska sojina omaka, ki je nastala kot stranski produkt fermentacije miso paste.
